Celebrating diversity at ANZCO - Ashley's peppermint crisp tart

We're currently celebrating diversity and inclusion, and what it means to ANZCO Foods.

What's Diversity and Inclusion (D&I)? 

Diversity: differences in age, gender identity, nationality, ethnicity sexual orientation, and religion, which can encourage different viewpoints and perspectives

Inclusion: Having a diverse workforce can lead to increased innovation, creativity, and revenue - but not without an inclusive culture

Exploring foods from different cultures is a great way to bring people together, learn about each other’s backgrounds, and promote cultural awareness.

Recognising and celebrating all cultural traditions, including food, helps employees feel seen and valued. When people share something meaningful from their heritage, it fosters a stronger sense of belonging and a more inclusive culture.

We'll be sharing recipes from different cultures represented at ANZCO across the next few weeks - try them out!

Recipe #3 - Peppermint crisp tart

Ingredients

  • 750ml whipping cream

  • 1x 360g cans Caramel Condensed Milk

  • 2x packs of Bakers Tennis biscuits

  • 3 x 150g slabs Nestlé peppermint crisp bars

Method

  1. Whip the cream until soft peaks form. In a separate bowl, beat the caramel with a fork to loosen and to ensure a smooth texture.

  2. Gently fold the caramel into the whipped cream, then add most of the chocolate pieces (set aside a cupful for decoration).

  3. Line a 30 x 22 x 6.5 cm dish with a single layer of whole Tennis biscuits. Top with half the caramel mixture, then add another layer of Tennis biscuits. Pour the remainder of the caramel mixture over the second layer of Tennis biscuits.

  4. Sprinkle the last of the Peppermint Crisp chunks over the top. 

  5. Cover with tin foil and chill for at least seven hours before serving.
